One category that stands alone within the awards and is truly aspirational is that of Chef of the year. We invite chefs and restaurateurs to nominate for this award. And to enter you must produce on paper ; a main course and dessert. You will be required to complete an application form which you will find in the "How to nominate and enter" tab. Innovation and simplicity are the key words. Our judges are looking for use of seasonal produce and textures and use of local produce where possible.

A shortlist of three finalists will be selected from the paper entries and will be invited to a live cooking final where the eventual winner will prepare a 2 course meal within a 2 hour time slot for 2 persons. A total budget of £20 will be allowed for all the produce (this must not be exceeded).

You will be judged on:
Balance of taste, seasoning and presentation
Originality & imagination in menu structure
Best use of seasonal and local produce
Hygiene, planning and work methods
Timing of final presentation dishes

Judged by: British Master Chef and Chair of the Judges Mark Baumann; Colin Jones, Sales Manager, Fresh Food Group; Matt Holder, Editor in Chief, Essex Chronicle Media Group; and Dan Watkins, Head Chef, Waterfront Place.

He is among just under 3,000 chefs from 70 countries to make the list, sharing the limelight with notables including Michel Roux, Raymond Blanc and John Williams, executive chef at Claridges.A British Master Chef, Mark recently starred in his own ITV series 'Baumann goes to Market' and is a guest presenter of UKTV Food's flagship programme Great Food Live

Colin joined the fresh food group in 2004, following the addition of Readings of Braintree to the fold. Having spent his entire working life in the fruit and veg industry, in one form or another, Colin has a long and very successful background of helping to provide chefs with an unparalleled level of product quality and customer service in Essex, and the surrounding areas.

Daniel came into the kitchen some 13 years ago gaining his experience working in top London restaurants. He has long had a passion for all things local, that's why he will make sure whenever possible the dishes appearing on his menus at the Waterfront Place feature local produce. He is responsible for creating the menus and many of the dishes they contain – a challenge which he really enjoys.

Daniel said: "I very much look forward to judging the Essex Chef of the Year competition at the live finals taking place at the Waterfront Place in June. I am sure my fellow judges will agree, we have a very hard task ahead of us."

The Waterfront Place is hosting the inaugural event of the Food and Drink Awards and Daniel said: "It is a tremendous honour to be cooking for so many guests from the world of food and drink and we look forward to presenting a memorable menu for all the guests."
